Chicken Wings with Blue Cheese Dip

Serves: 4 Sides or Snacks.
Time to Make: 30min (Quick Preparation, Longer Time to Marinate and Cook).

First served in 1960s in U.S., though inspired by French love for cheese, it is now a popular snack or starter worldwide. This variation of the recipe provides a quick and easy way to marinade the wings, have them cooked in the oven or grilled, and served together with a light blue cheese sauce, all prepared from your kitchen.

INGREDIENTS FOR WINGS

  • 1.5 kg x Chicken wings
  • 2 x Garlic cloves (crushed and chopped)
  • 2 tablespoons x Worchester sauce
  • 2 tablespoons x Cholula or Tabasco sauce
  • 2 tablespoons x Soy sauce
  • 2 tablespoons x Honey
  • 2 tablespoons x Oil of your choice (e.g. sunflower or olive)
  • 2 tablespoons x Mixed herbs
  • 1 tablespoon x Salt
  • 1 tablespoon x Smoked paprika
  • 1 tablespoon x Mustard
  • 1 tablespoon x Ketchup
  • 1 tablespoon x BBQ sauce
  • 1 teaspoon x Cinnamon
  • 0.5 tablespoon x Chilli flakes

INGREDIENTS FOR DIP

  • 150 g x Blue cheese
  • 100 g x Spring onions or fresh chives
  • 200 ml x Kefir or Greek yoghurt
  • 2 x Garlic cloves
  • 1/2 x Lemon (for fresh lemon juice)

METHOD FOR WINGS

Step 1: Mix all ingredients together to form an even marinade base. This includes all ingredients from the list of ingredients for wings, apart from 1.5 kg of chicken wings themselves – do not mix the wings in this step.

Step 2: Find a container or bowl, big enough to fit chicken wings. Then add 1.5 kg of chicken wings to it, and mix these well with the marinade, prepared in step 1. Mix by rubbing the marinade into the chicken wings, so the marinade is distributed evenly.

Step 3: Cover the dish, prepared in step 2, and leave it in the fridge to marinate for at least 2 hours. For more flavour marinate for 24 hours.

Step 4: Preheat the oven to 180 degrees. Arrange the marinated chicken wings on the cooking tray, so the wings do not sit on each other. Cook for 25 minutes until the wings turn to nicely golden brown colour with a bit crispy skin.

Chef’s TIP:

Chicken Cooking Time: For more crispy wings, cook them for additional 7 to 10 minutes on the usual or grill setting in the oven.

METHOD FOR DIP

1 Step Only: In the blender add 150 g of blue cheese, 200 ml of kefir or greek yoghurt, 2 cloves of garlic and half a lemon fresh juice. Blend these together. Then add 100 g of chopped spring onions or chives for decoration and your dip is ready.

Note: If you do not have a blender, chop – with a knife or using a grater – the garlic and blue cheese as fine as you can. Add to this the rest of the ingredients, mix it well, using a whisk and sprinkle, with spring onions or chives.

Chef’s TIP:

Dip Preparation Time: The blue cheese sauce can be prepared while chicken wings are cooking or in advance, as it can be kept in the fridge for 2-3 days.
